Quick and Easy Low Carb Buddha Bowl

Today’s recipe is a super quick and delicious low carb buddha bowl. For my version of this I used steak but you can always sub that with chicken, ground turkey, salmon or any vegan alternatives, all veggie would be delicious as well! I’m really trying my best to make new dishes and recipes to make eating low carb as enjoyable as possible and this dish really really hit all of the flavor spots for me.

Steak Buddha Bowl
8-10 oz cubed steak
1 cup frozen sweet potatoes
1 cup halves fresh brussel sprouts
2 cups riced cauliflower (frozen)
1 fried egg or however many you want lol
Green onion and sesame seeds for garnish
Sesame oil optional for stir frying

Sauce
1 Tbs oyster sauce
2 Tbs mirin
1 Tbs soy sauce
1/4 cup brown sugar
1/2 Tbs fish sauce
To turn this into a peanut sauce just add 1 Tbs of peanut butter
Feel free to play around with the measurements to your own liking

The great thing about this is that you can swap any of the meats or veggies to something of your liking, just make sure to adjust your cooking time.
