Spicy Jamaican Pork Curry with Coconut Rice/ Dairy Free, Gluten Free, Sugar Free/ Instant Pot

Spicy Jamaican Pork Curry with Coconut Rice
Pork- 2lbs
Bell Pepper- 2ea
Onion- 1ea
Lime- 1ea (I squeezed the juice of the entire lime while the pork was browning).
Potatoes- You want about the amount of potatoes as meat in the dish (I used Yukon gold potatoes because that is what I had. I used about 13 small Yukons. You can use any type of potato you want, I have even used sweet potatoes).
Rice- 1 cup (make sure to rinse the rice so it doesn’t become starchy, and add about 1.75 cups of cold water to the rice. Then I added .25 cups of coconut milk powder and 1 TBSP of Vegetable Base to my rice and stirred it well. I cooked it in a rice cooker. When it was done I threw in half of the green onions that I chopped into the rice and the rest of the green onions was garnish).
Green onions- 1 Bunch finely chopped
Hot Curry Powder- 4 TBSP
Vegetable Base- 2.5 TBSP (1TBSP For the rice and the rest for the Pork)
Onion Powder- 2 TBSP
Coriander- .5 tsp
Allspice- .5 tsp
Crushed Chili Pepper- 1 tsp
Ginger Juice- .5 tsp
Ginger Powder- 1 tsp
Ghost Pepper Salt- .5 tsp
Lime Salt- 1 tsp
Pepper- 1 tsp (or to taste)
Sea Salt- add to taste
Coconut Oil- 2 TBSP (Half goes into the marinade for the pork and the rest is used for browning the pork)

I usually make this with cilantro but I was out. If you add cilantro do this at the very end. I like to chop up at least 1 bunch, and throw it in right before it’s plated. This dish is good with the addition of garlic. I suggest adding 2 TBPS of garlic to the marinade. I didn’t do this because my family and I are allergic to garlic. Also the coconut milk powder does not have any added sugar, dairy, or gluten in it and it is low glycemic.
